Quick Dinner Ideas

Being a mum to 2 little ones, I know how time poor we can get during the day and as the dreaded dinner time routine rolls along, we sometimes need a quick and easy recipe that tastes 100% yummy!



My first pick would definitely be 'Mongolian Lamb' with hokkien noodles. This beautiful dish is a staple in our household and is so tasty too!


Recipe for Mongolian Lamb

Ingredients

  • 1/2 Kg of diced lamb (sliced thinly)

  • 1 bag of Frozen stir fry vegetables (any brand)

  • 2 brown or red onions (sliced thinly)

  • 1 pack of sliced mushrooms (optional)

  • 2 red capsicum (sliced thinly, optional)

  • 1 teaspoon of salt

  • 1 teaspoon vegetable oil

  • 1 teaspoon of vegeta stock powder

  • A dash of cracked black pepper

  • 2 sachets of Lee Kum Kee Sauce - Mongolian Lamb

  • 1 fresh red chilli (optional, if spicy stir fry is desired)

  • 1 packet of 440 g Wokka Thin Hokkien noodles

Instructions

Preparing the stirfry

  1. Add oil to a hot wok, if you haven't got a wok, you can just use a pot.

  2. Slice the onions thinly and add to the oil and fry for a minute on medium heat.

  3. Slice the lamb thinly, and when the onion is soft add the lamb, mushrooms and fresh chilli to cook for about 4 minutes.

  4. Add the salt, cracked pepper and vegeta and mix.

  5. Slice the capsicum and add to the meat.

  6. When the meat has browned, add the pack of frozen vegetables. Please note that you can use fresh vegetables as well. I just use frozen for convenience.

  7. After the vegetables have thawed in the pot, add the 2 sachets of Lee Kum Kee Sauce.

  8. Let it simmer for a further 2 minutes or when the sauce starts to thicken and take off the heat.

  9. When noodles are ready, place the noodles in with the stir fry mix and toss it around to mix the sauce and vegetables through.

  10. Serve!

Preparing the Noodles

  1. Boil about 750 ml of water

  2. Take out the noodles from packet and add to a heat proof bowl.

  3. When the water is boiling, cover the noodles with water and seal the bowl to keep the heat in.

  4. Leave them to soak in the boiling water for about 5 minutes.

  5. When ready, pour the noodles into a colander and let it drain.
