Lebanese Dinner Ideas

There is nothing nicer then cooking a dish that reminds you of your childhood. That smell that takes you back to the moment you would come home and your mother would be cooking your favourite foods. That is the best food memories you can have as a child.



Koussa Bi Laban (Stuffed Zucchini in Yoghurt) is one of my favourite comfort foods, especially in the cooler weather.


Recipe for Koussa Bi Laban (Stuffed Zucchini in Yoghurt)

Ingredients

  • 250 g minced beef

  • ¾ cup Sunwhite Calrose/medium grain rice, rinsed and drained

  • 1 kg zucchini, medium-sized pieces

  • 1 kg yogurt

  • 6 cloves garlic, minced

  • 2 tablespoons butter

  • 1 tablespoon corn flour

  • 2 tablespoons mint, dried

  • 1 teaspoon allspice, ground

  • Salt and pepper

Instructions

Preparing the Koussa

  1. Mix the meat and rice in a bowl and season with salt and pepper.

  2. Remove the stalks of the zucchinis, then hollow out the inside using a vegetable corer leaving thickness of about 1 cm or less.

  3. Stuff the zucchinis with the meat and rice mixture leaving free space at the top of zucchini, about 1 cm.

  4. Put the yogurt in another pan over medium heat and add the butter, garlic, corn flour, mint, and allspice.

  5. In a large, arrange the stuffed zucchinis in layers and cover half of them with water then cook over low heat for 20 to 25 minutes.

  6. Keep stirring until the yogurt sauce boils then reduce the heat

  7. Place the stuffed zucchinis one by one, in the yoghurt and let it simmer for about 45 minutes to 1 hour.

  8. Serve hot with the yogurt sauce.
